The restaurant had agreed to hire me on a trial basis. I’d been warned repeatedly that it was impossible to get a position other than short order or fry cook straight out of culinary school.  But here I was working for a real-life boutique restaurant called Fork whose sign was scrawled on a fake blackboard with a pink and blue fork underneath. This would necessitate frequent laundering.
